Favorite Recipes
The longer I live, the more I see the value in learning to cook. Since I have to feed myself anyway, I'm working on building a repertoire of healthy and satisfying meals I can put together quickly without having to wrack my brain. To that end, I've been watching a lot of Internet Shaquille's cooking videos on YouTube. (Check him out if you've never heard of him -- he's the GOAT.) Anyway, here's one of his recipes I've been making a lot.
Internet Shaquille's BBQ Chickpea Burritos
(Or chickpearritos as I call them.)
Ingredients
- 1 can chickpeas
- ~2 tablespoons vegetable oil
- BBQ seasoning mix of choice
- BBQ sauce of choice
- sour cream or shredded cheese
- pickled red onions
- chopped cilantro or spinach
- 4-5 flour tortillas
Instructions
- Rinse the chickpeas in a strainer and arrange them in a single layer on a large microwave safe plate. Microwave for 5 minutes. (This will help the chickpeas reach the desired texture.)
- Using oven mits, CAREFULLY remove plate from microwave. It will be hot. Over medium heat, sautee chickpeas in a skillet in the oil, adding a generous amount of BBQ seasoning mix. (Enough to cover the surface of the chickpeas.)
- Turn down heat to low and add a generous amount of BBQ sauce. Mix to distribute the chickpeas evenly.
- Add the sour cream (or cheese), pickled onions, and cilantro or spinach. Mix evenly.
- Place a generous scoop of the chickpea mixture in a (preferrably prewarmed) tortilla and wrap it up. For a little added flourish, seal the burittos closed by frying them flap-side down in a skillet with a little bit of butter. Makes about 3-5 burritos, depending on tortilla size.
